To scale a bread recipe for fifteen loaves, begin with the target dough weight per loaf, calculate the total dough required, convert the original formula to baker’s percentages and resize every ingredient against the new total flour weight. Then test the result against the actual capacity of your mixer, proofing vessels, refrigerator, oven and shaping speed.
The arithmetic is the easy part. The production work is deciding whether fifteen loaves should be mixed as one batch, two sub-batches or several staggered batches—and documenting the timing well enough that loaf fifteen receives the same treatment as loaf one.
Begin with finished yield
Decide the number and target size of the finished loaves first. Then account for expected process loss. This works better than choosing an arbitrary multiplier and hoping the dough lands where you need it.
For example, fifteen loaves at a chosen pre-bake dough weight create a target total dough weight. Your formula should be scaled to that target, then tested in the equipment you will actually use.
Convert the formula to baker’s percentages
In baker’s percentages, total flour is 100 percent and every other ingredient is expressed relative to that flour weight. This makes a formula easier to resize while preserving its balance.
- Record every flour—including flour in a preferment
- Keep hydration and inclusion percentages consistent on the first test
- Calculate weights before bake day and round deliberately
- Keep a written record of every change
Check capacity before you mix
The limiting factor may be the mixer, tubs, proofing space, refrigerator, oven, cooling racks or your own shaping speed. A formula that fits mathematically can still fail operationally.
Split the work into repeatable sub-batches when one oversized batch would strain the equipment or allow the last loaves to ferment much longer than the first.
Run a timed rehearsal
Write down the actual start and finish of mixing, folds, division, shaping, baking and cooling. Measure finished yield and note the dough and room conditions. Repeat once before selling the batch. That rehearsal becomes the beginning of your production standard.
From one 750-gram dough piece to fifteen
Suppose your chosen pre-bake dough weight is 750 grams. Fifteen loaves require 11,250 grams of portioned dough. Add a small process allowance for dough that remains on tools, tubs and the mixer; a planning target around 11,400 grams gives you room without creating an entire extra loaf.
Assume the original formula totals 180 percent in baker’s percentages: flour 100%, water 70%, starter 20%, salt 2%, cheese 7% and jalapeño 1%. Divide the target dough weight by 1.80 to estimate the flour basis: 11,400 ÷ 1.80 = 6,333 grams of flour. The remaining ingredients are then calculated from that flour weight.
That result is a planning formula—not yet a sellable production standard. Verify whether your starter percentage is expressed consistently, whether starter flour and water are included in total flour and hydration, and whether inclusions change absorption or dough strength. Then run a timed rehearsal and weigh the actual dough before division.

Using a multiplier without target weights
Ten times a home recipe may produce too much or too little dough because the original yield was never measured precisely.
Ignoring the mixer’s working limit
A bowl may physically hold the dough while the motor, hook or mixing action cannot develop it consistently.

If division and shaping take forty minutes, early and late loaves are no longer on the same fermentation schedule.

When hydration, inclusions, batch size and timing all change at once, a poor result teaches you very little.

Frequently asked questions
Can I simply multiply every ingredient by fifteen?
Only if the original recipe makes exactly one loaf of your target size and the larger batch fits the same process assumptions. Baker’s percentages and target dough weight make the calculation auditable.
Should fifteen loaves be one batch?
Not necessarily. Repeatable sub-batches are often safer when equipment or shaping time would create uneven mixing and fermentation.
How many tests should I run before selling?
At minimum, complete a full-size timed rehearsal and then repeat the result. More testing is appropriate whenever ingredients, equipment or environmental conditions change materially.
